Let’s talk about hydration, yeast, flour types and much more while preparing our pizza and focaccia dough. Nothing is more satisfying than working with leavening!

Cooking class
IT’S NOT JUST THE RECIPE; YOU WILL NEED TO LEARN HOW YEAST AND GLUTEN WORKCooking class includes:
– Know your ingredients: flour types and strength, hydration, yeasts
– Dough preparation
– What we will do: 75% hydrated Pizza, Focaccia Genovese, Focaccia di Recco
– How to manage leavening
– Cooking method with your home ovens
Duration: aprox. 2.5 hours
Let’s have lunch!
…{OR DINNER} IN THE GARDEN!You can complete the experience adding a lunch/dinner to your cooking class.
Menu will include:
– one antipasto
– your pizza with the desired toppings
– dessert
– wine / local craft bear
Dinner will be served in our garden or in “the Mill room” in case of need.

What if I have any food allergy or food intolerance?
Menu will be designed on seasonal ingredients and considering your dietary needs. Please provide any information about it while booking.
Is it possibile to do it gluten-free?
Sorry, no. We will work with low quantities of yeast and long leavening to obtain a light and easy to digest dough. Gluten is a crucial element to obtain good results. If you are celiac, I am sorry, but this is not the lesson to attend.
How much the cost change in case I would like to do the lesson at my place?
I can travel, actually I even like that! Depending on where are you located price can change. Let me know your address and I will give you a price, usually you can consider about a +35%
